Rice Flakes and Sweet Potato Crust Pizza

Leftovers are becoming the aunt of innovation! A lot of times, I end up innovating some dish just because I had some leftovers. This pizza is a result of one of those experiments.

I had made poha (rice flakes) last night but ended up soaking more than required. While I was storing the poha, an idea struck my mind. I thought this could become the crust of a pizza. So, the next day, I was looking for something to mix with poha that could bind it and I didn’t want gluten. Looked up the refrigerator and found half sweet potato left from my navratra fasts. And, here is the result – a healthy pizza. You can also replace the sweet potato with a regular potato.

Rice Flakes and Sweet Potato Crust Pizza

Ingredients for the pizza crust

  • Soaked Rice Flakes – 2 cups
  • Sweet Potato – 1 cup (boiled and grated). Can be substituted with a regular potato
  • Cornmeal – 2 tbsp (optional)
  • Mix Cheese – 1/2 cup (grated)
  • Sea Salt – to taste
  • Herbs (thyme/oregano/basil/rosemry/dill/parsley) – 2 tbsp
  • Cooking spray

Ingredients for toppings

  • Parmesan Cheese – 4 tbsp (grated)
  • Mix Cheese – 1/2 cup (grated)
  • Arrabiata sauce – 4 tbsp
  • Sea salt – to taste
  • Oregano – 1 tbsp
  • Vegetables of your choice ( I used mushrooms, red and yellow bell peppers, and black olives)

Method for rice flake and sweet potato pizza crust

  1. Mix the soaked rice flakes, grated sweet potato and the corn meal (if using).
  2. Add salt, grated mix cheese and herbs.
  3. Mix well and the dough for the crust is ready.

Assembling the rice flake and sweet potato pizza

  1. Line a baking sheet on the tray and pre-heat the oven to 250 C
  2. Spary some cooking oil.
  3. Make two balls from the prepared crust dough.
  4. Place one of them on the baking tray and pat into a round pizza crust.
  5. Bake it for 10-15 minutes or until golden brown.
  6. Take out from the oven and spread half of the arrabiata sauce.
  7. Next spread the veggies, sprinkle some sea salt & oregano, and top it up with half of the grated mix cheese and parmesan cheese.
  8. Bake for another 10 minutes. The cheese should start melting and bubbling.
  9. Garnish with some more oregano.
  10. Repeat for the second portion.
